Zuma Istanbul brought the London-Dubai-Hong Kong format inside İstinye Park — the izakaya programme, the robata grill, the sashimi counter, all running on the standard the brand has held across its global outposts. The terrace, with the fire-pit installation and the DJ booth, is the difference between the Istanbul room and the rest of the chain: weekend nights here run later than the dining room would suggest.
Reserve dinner at nine on a Friday for the terrace, take the sashimi opener and the robata main, and let the DJ run after eleven. The sake list is properly curated; ask the sommelier to pair.
