Chotto Matte is the Soho Nikkei room that Kurt Zdesar opened in 2013 and which remains the most reliable answer for the dinner where the music has to be loud enough to register but the food still needs to be correct. The robata sits in the centre, the ceviche bar is on the side, and the basement floor opens for the late hours on a Friday and Saturday. The Marylebone sister is calmer.
Book the dinner at 21h on a Thursday, take the chef's selection and the salmon nikkei tiradito, move to the bar after midnight. Soho is the room with the energy; Marylebone is the room with the meal.
