Coya at the Four Seasons opened in 2014 and remains the strongest Peruvian kitchen on the Gulf coast — the ceviche counter is the seat to ask for and the pisco bar at the entrance handles the wait when the room is full. The Thursday and Friday services are the busiest of the week.
Take the ceviche tasting, the lomo saltado, and one of the signature pisco sours before sitting. The room is loud and the dinner is meant to feel like an evening, not a meal. For a quieter version of the same kitchen, the early service at 19h on a Tuesday is the best seat of the week.
