Auberge des Maures has been run by the same family since 1942 and remains the village's most consistent dinner address — Provençal, plate-driven, no concept beyond the cooking. The courtyard under the vine canopy seats around eighty and turns over in two long services.
Book the early service at 20h, sit in the courtyard, take the daube and the rouget on the same table. Skip dessert and walk to Sénequier for the digestif. The address is the dinner I default to with first-time guests who want one credible village meal without the beach-club register.
