Plachutta opened on Wollzeile in 1993 as the family's project to take Tafelspitz — the Viennese boiled-beef dish — and serve it with the seriousness Vienna had stopped giving it. The signature is the copper pot brought to the table with the beef cut, the marrow bone, the broth, the apple-horseradish and chive sauces on the side. The Wollzeile original is the canonical room; the eight sister addresses across the city run the same format.
Book the lunch or dinner four days ahead, take the classic Tafelspitz with the marrow bone, drink Grüner Veltliner. The whole meal is the single dish done correctly.
