Nick & Toni's has been the dinner reservation that defines a Hamptons week since 1988. The room is a Tuscan farmhouse, the oven is wood-burning, the menu changes with what is in the garden behind the kitchen, and the dining room has been working the same crowd of regulars long enough that the waitstaff knows what most of them drink before they sit down. The roast chicken and the bucatini are the famous dishes; the wood-oven pizza is the one to share.
For weddings I always book the eight o'clock seating two days before the ceremony — the bride's table on the patio, white wine, the pizza-pasta order without thinking about it. Reservations are on Resy; in July and August you book three weeks ahead.
