Mikla is the room that put the New Anatolian Kitchen on the international map — Mehmet Gürs's project on the top of the Marmara Pera, with a food anthropologist on the payroll, and a sourcing programme that has rewritten the Turkish seasonal calendar for a generation of chefs that came after.
