Hünkar — named after the Ottoman word for sovereign — was founded in Fatih in 1950 by the Uğumu family and moved its principal kitchen to Nişantaşı in 2000. Four generations on, the daily counter still carries thirty to thirty-five dishes cooked from the morning's market, and Hünkar Beğendi (the dish that gave the room its name) and the topik remain the obvious orders.
Read the counter before you sit, choose the daily list rather than the printed menu, and pair the lunch with the rest of the Nişantaşı walk. Dinner is the calmer service; lunch is when the dining room fills up with regulars.
