Ling Ling by Hakkasan

Ling Ling occupies the central terrace of the Mandarin Oriental, looking out across the resort's olive groves to the Atlas line behind. The Hakkasan format has been adapted intelligently to Marrakech — dim sum, crispy tiger prawns, the wok-tossed lamb cutlets, grilled sea bass, the spicy prawn curry — and the resident DJ runs the soundtrack from the central booth without overwhelming the dining room.

Reserve the terrace rather than the indoor banquette, order the supreme dim sum to open, and ask the bar to build the cocktail pairing. The car back to the medina takes twenty minutes — plan accordingly.
