Le Foundouk occupies a restored foundouk — the old caravan inn — deep in the medina, with cedar ceilings, candle light and forged ironwork on the lower floors, and a rooftop that gives one of the cleaner views of the medina to the Atlas. The kitchen has held a calm Moroccan-and-international line since the restoration in 2000, and the bar is one of the more comfortable in the souk.
Reserve the rooftop in the warm months and the middle floor in winter, take a long aperitif before ordering, and let the meal settle. The medina walk back to a riad afterwards is the best part of the evening.
