The old carpet store on Rahba Kedima was reworked over four floors by Kamal Laftimi a decade ago and has become the rooftop every first-time visitor to the medina is sent to first. The kitchen takes Moroccan ingredients and rests them on a lighter, contemporary plate — the chermoula sea bass, the slow-cooked lamb, the saffron ice cream — without losing the produce of the souk one floor below.
Book the highest terrace forty-eight hours ahead and arrive thirty minutes before sunset for the view across to the Koutoubia and the snow line. Order conservatively and share. The wine list is short but well-chosen.
