La Paillote is the French address outside Marrakech that Camille's clients learn about from the residents rather than the guides — a country house four kilometres from the centre, with the dining set under olive trees that have been there longer than the building. The menu is French and Mediterranean in the old sense — duck breast, rack of lamb, line-caught fish — and the kitchen is built around the produce more than the technique.
Reserve a garden table for the early-evening light and ask for the chef's daily recommendation rather than working through the printed menu. The wine list is short but properly chosen.
