La Cour des Lions occupies the third floor of Palace Es Saadi and is one of the very few rooms in Marrakech that approach traditional Moroccan cooking with the seriousness usually reserved for French gastronomy. Fatéma Hal — the cookbook author who has spent forty years tracing the regional cuisines of the country — works through pastilla, tangia, mechoui, and the slower preparations on a tasting that takes most of an evening.

Reserve the panoramic terrace in the warm months and the carved-stone room in winter, and let the kitchen send the longer menu. Pair the night with the casino downstairs if the evening is meant to continue.
