Kabana

Kabana — Camille's notes had it as "Cabana" — opened on the rooftop at the gates of the medina with one of the cleanest views of the Koutoubia minaret in the city. Luisma Naranjo, the Ibiza chef brought in to write the menu, cooks a Mediterranean line that sits more easily next to the cocktail programme than the heavier Moroccan plates the neighbourhood is full of.

Reserve the table on the rim of the terrace for sunset, take a long aperitif round before dinner, and order the fish to share. The DJ takes over after eleven; either commit to the night or be off the roof before it tilts.
