Café Kessabine sits on the southern edge of Jemaa el-Fna with three floors of terrace stacked above the square. The kitchen is plain Moroccan — chicken tagine with olives and preserved lemon, fresh juices, mint tea — and the room is unfussy, but the rooftop is one of the few places to read the square at the right elevation while the snake charmers and the food stalls take over the ground.
Go for a late-afternoon coffee rather than a meal, climb to the top terrace, and watch the square fill up between five and seven. The misters keep the rooftop comfortable through the worst of summer.
