Lhardy is the dining room of Madrid as it was in the 1860s — Emilio Huguenin Lhardy opened the door in 1839, and four generations later the silver samovar in the downstairs shop still pours consommé to standing customers in winter. The upstairs salons are velvet, mirrors and gilt; the cocido madrileño is the dish to order, served in three vuelcos as it always has been.
