La Mamounia has been the address every other Marrakech palace is measured against since 1923 — seventeen acres of garden inside the medina walls, a roll call of guests that runs from Churchill to most of the cultural and political century that followed, and the kind of polish that comes from a hundred years of refining the same operation. The Jacques Garcia restoration brought the interiors up to a contemporary palace standard without losing the orchard, the courtyards, or the gardens.

Reserve a junior suite with the garden view, take breakfast on the private terrace, and use the spa rather than the pool on the warmer afternoons. One dinner at L'Italien par Jean-Georges, one at Asian by JG, one in the garden — the on-property kitchens are properly serious.
