Jiro Ono stepped back from the counter in 2023 and his eldest son Yoshikazu now leads the room — the technique, the rice, and the precise twenty-piece progression unchanged from the years that earned the Ginza basement its place in the modern sushi canon. Michelin removed the listing in 2019 when the Ono family stopped accepting public reservations; the room continues to operate exactly as before.
Reservations are made through the hotel of a five-star Tokyo hotel three to six months out — the Aman, the Peninsula and the Park Hyatt all have the standing to place the call. Sit at the counter at 17h30, take the omakase without speaking, and finish in fifty minutes. The pilgrimage that still rewards the journey.
