Salt opened in Tokyo in 2005 under Luke Mangan and continues, twenty years on, as the modern-Australian grill that fills the late-evening slot in Ginza when the kaiseki rooms have closed. The brand passed out of Mangan's hands in 2018 but the format has held — the open kitchen, the sharing plates, the wine list built on smaller Australian houses.
Book a corner table for dinner or walk into the tapas bar after 22h. The right late dinner for an American group already on holiday hours and not yet ready to call the evening. Not the kitchen for the discovery of Tokyo — the kitchen for the third evening.
