Shinobu Namae's three-star French-Japanese tasting room — Relais & Châteaux, Michelin Green Star, the most considered modern dinner in Tokyo.

Shinobu Namae trained with Michel Bras and Heston Blumenthal before opening L'Effervescence in 2010, and the kitchen continues to express French technique through a Japanese seasonal lens — vegetables given the structural role, the long fermentations, the close producer relationships that earned the Green Star alongside the third stripe in 2021. The spirit of ichiza-konryu — the room built on the relationships between chef, producer and guest — frames every service.
