Mammà is the Capri-town starred kitchen that does not require leaving the centre. La Ragione trained under Gennaro Esposito at Torre del Saracino and the Campanian fundamentals are intact — buffalo mozzarella from the Caserta plain, anchovies from Cetara, lemons from the family terraces. The dining room seats forty and the service is on first-name terms by the second course.
