LÙMARA is the cosmopolitan move of the 2025-26 season — Annie Famose's group brought in Rodolfo Castellanos, the Oaxaca chef behind Origen and a Top Chef Mexico judge, to build a fine-dining Mexican room in 1850. Mezcal cellar, agave tasting, the kind of menu that takes the cuisine seriously rather than as a beach-club exercise.
Book the first or second seating, take the chef's tasting, accept the mezcal pairing. The room is the alpine dinner I propose to a guest who has done all the chalet restaurants and wants something that does not exist anywhere else in the Alps.
