Le Sarkara is Sébastien Vauxion's two-star room inside Les Airelles — the only dining room in the world built around the pastry tasting menu, no savoury course, the full meal of sugar and structure that has earned the stars on its own terms. The kitchen is the most ambitious dessert-only operation of any palace in the world.
