Le 1947 is Alléno's first three-star room, opened in 2017 inside Cheval Blanc Courchevel — twenty-two covers across five tables, which makes it one of the smallest three-stars in France. The cooking is built around the chef's extraction work, the long sauces, and a relationship with the alpine larder that has matured over eight winters.

Book six weeks ahead for a stay guest, eight for outside. Take the tasting menu, take the wine pairing, sit at the corner table with the kitchen view. The dinner runs four hours.
