Dekotora is the twelve-seat speakeasy behind the vintage cigarette machine inside Niño Gordo in Wynwood — Chef Carlos García's omakase counter, A5 wagyu, the rice recipe refined over four years. The room takes its name from the decked-out Japanese trucks of the seventies, and the projections and lighting are calibrated to the same register.
Book three weeks ahead for the late seating, take the full omakase, accept the sake pairing. The address is the most theatrical sushi experience in Miami and the most precise — and the dinner that does not leave the room without producing a story.
