Dinner opened at the Mandarin Oriental in 2011 as Heston Blumenthal's historical British project — every dish on the menu drawn from a documented English recipe of the 14th to 19th century — and has held two Michelin stars since 2014. The meat fruit (chicken liver parfait disguised as a mandarin) is the dish that defined the room and remains the only one the regulars order without thinking.
