Bayview sits inside the President Wilson and looks straight at the lake. Michel Roth — Bocuse d'Or, MOF, formerly of the Ritz Paris — runs the room with French classicism that has been adjusted for the altitude rather than reinvented for it. The tasting menu is the right way in.
Ask for a window table and an early sitting. The wine list leans on the Vaud and the Valais without losing the Burgundy backbone, and the cheese trolley is one of the better ones in French-speaking Switzerland. A serious dinner, not a destination performance.
Book it for the long, slow dinner on the lake.
