Sinicropi works in ceramics as well as plates — he throws the service pieces himself in his Vallauris studio — and the precision shows. The menu is built around Provence but read through Japan: mineral, restrained, no butter where a brushstroke of olive oil will do. Two stars in 2025, with the third whispered about every year.
Take the nine-course with the wine pairing. Sit on the terrace for the long blue hour over the Mediterranean and ask for the cheese trolley even if you have already finished.
