Carbone opened on Thompson Street in 2013 and remains the room that built Major Food Group — Italian-American by way of mid-century theatre, tableside Caesar, the veal parmesan, the spicy rigatoni vodka that the rest of the city has spent a decade copying. The booths in the back room hold the regulars; the front tables hold the rest.
