The Major Food Group room at ARIA — the Carbone of midcentury New York transplanted to the Strip, and still the festive dinner of every Vegas weekend.

Carbone opened at ARIA in 2013 and has been the impossible-to-book festive dinner of Las Vegas ever since — the Major Food Group's homage to midcentury Italian-American dining, the captains in burgundy tuxedos, the tableside Caesar, and the Spicy Rigatoni Vodka that became famous enough to spawn its own viral category. The room is loud, the cocktails are stiff, and the bill arrives over three hundred per person by the time the wine has been poured.

For EVJF and bachelor weekends in Vegas this is the right Saturday-night reservation — the eight-thirty seating, the long banquette for ten, the wine list opened to Brunello. Reservations on Resy open thirty days in advance and the prime slots are gone within minutes. Business attire enforced.
