ARCA is the Hartwood for the next generation — opened 2015 by José Luis Hinostroza, who came out of Noma in Copenhagen and brought the live-fire-and-local-sourcing discipline to a palapa dining room a few hundred metres up the road from the original. The menu rewrites itself constantly based on what the small network of farmers and fishermen are sending, the sharing-plate format means you taste a dozen things in an evening, and the kitchen ranked World's 50 Best at number sixty-seven in 2025 and held its MICHELIN Guide recognition into 2026.
