Dr. Shakshuka

Bino Gabso's Tripolitan dining room in the Jaffa flea market — copper-pan cooking, three decades on the same corner.

Dr. Shakshuka has run from the same Jaffa flea market corner for three decades, with Bino Gabso turning out Tripolitan-Libyan cooking from copper pans — shakshuka, of course, but also couscous, slow-cooked lamb, and a list of stews that read like a family kitchen. The room is informal, the tables communal.

Book the lunch service for a slower meal, take the signature shakshuka, the lamb couscous, and one of the daily stews. Closed Friday evening and all of Saturday — Sunday lunch is the calmest. The kitchen is one of the few residential Tripolitan rooms left in the city.
