Ao is the South-Pigalle izakaya that has earned its short waiting list without a website, just a long bar and a kitchen that takes its time. The plates are small and read short — yakitori, the crispy gyozas, the cold tofu — and the natural sake list is the most carefully edited of the arrondissement.

Book a week ahead for two at the bar, order the omakase if the chef is in, drink the sake by the small carafe. The room is the right after-work answer for the dinner that lasts three drinks.
