The convent dates to the 14th century. It became a hotel in 1896. Four Seasons reopened it in July 2021 after a restoration led by architect Valentina Pisani and art restorer Rosaria Catania Cucchiara — a project whose ambition was to change as little as possible, which is considerably harder than renovation. The Grand Cloister is intact: palms, exotic plants, the song of the thing that has always been there. Season two of The White Lotus filmed here in early 2022, which tells you the production understood that a building with this much original material cannot be made to look like a set. It already was one.
The Botanica Spa draws its vocabulary from the hotel's gardens and from the layered material cultures that shaped Sicily — Roman, Byzantine, Arab, Norman. Treatment rooms carry the names of flowers from the property: Zagara, Jasmine, Hibiscus, Jacaranda. The therapies run volcanic stone and Sicilian citrus alongside HydraFacial; nobody explains the combination because it does not require explanation at this address. Principe Cerami holds its Michelin star on the terrace above the Ionian Sea, with Etna in the background as if placed there by a director with too much confidence and exactly the right instinct.
Book it for the cloister at noon and the Etna terrace at dusk.
