Chris Salans brought the technical kitchen of Mozaic Gastronomique in Ubud down to Batu Belig beach as the beach-club version — private gazebos for the long lunch, sun beds for the day, and the Asian-Balinese cocktail register that the Mozaic programme has developed for twenty years. Quieter than Ku De Ta or Potato Head, and the kitchen is the difference.
